Vegan Korean BBQ tacos

Hey scholars!

In trying to fulfill requests for food recipes, I find myself searching for vegan brands and coming up with recipes that are quick, easy, delicious, and cost effective, okay, cheap. While in the store, I came across some meatless Korean BBQ and decided to give it a try. 




Instructions:

Cook the meatless chicken according to the instructions on the package. 



As a filler for my tacos, I used quinoa and southwestern brown rice and romaine lettuce.  I also use tortillas free of trans fat (partially hydrogenated and hydrogenated oils) and cholesterol. You may assemble your tacos however you like.

Blueberry Tea and Fruit Smoothie

I am having so much fun using tea as a liquid base for my smoothies, I will be trying them for my juices soon. 



This smoothie, is simple. Blueberry tea and frozen blueberries.

Ingredients:




Steep one blueberry tea bag and allow to sit for a few minutes, the longer, the better.

Pour 1 to 2 cups of frozen blueberries into the blender.

Add the tea to the blender. 

Blend for 30 seconds to 1 minute. 

Pour.

Enjoy!

Green Apple Smoothie

My blender is probably my favorite kitchen appliance. Assembly is quick as the labor and clean up. On days where I want to create a recipe but my laziness interferes with my genius, I throw some stuff in the blender. Here is what I came up with this time. 

Ingredients:

1 green apple
1/2 cup frozen pineapple chunks
1/2 cup frozen mango chunks
2 handfuls baby spinach
2 cups coconut water

Blend and pour. 

Enjoy!

Vegan Chick'n Sliders

I am constantly asked about brands cater to vegans. One of my favorite brands is Gardein. In an earlier post, I used this brand's fishless fillets to make tacos. This time, I used their chick'n sliders. I must say that I was impressed. These made me forget that I was not actually eating chicken. 


Instructions:

Heat according to the package; there are three ways listed on the box.

Since these are "chicken" sandwiches, assemble them however you like.

Vanilla and Chocolate Smoothie

I am sharing a smoothie/shake that I make when I am strongly craving something chocolate. As with, well, damn near all of the recipes I come up with, I did this on the spot. When I first made it, I had no idea how it would come out. Whenever I make a juice or smoothie, I have one cardinal rule, drink it because I am not letting my produce go to waste. Fortunately, I have thoroughly enjoyed each recipe. For this one, I made two separate smoothies and combined them. 

Ingredients:
4 frozen bananas
2 cups milk
cacao powder
cacao nibs
vanilla extract

For the vanilla smoothie, in the blender put in 2 frozen bananas, 1 cup of coconut, almond, or cashew milk, and vanilla extract; I did not measure this, let's say 1/4 tsp. Blend and pour.



For the chocolate smoothie, blend 2 frozen bananas, 1 cup of milk, and cacao powder, and cacao nibs; again I did not measure the powder or nibs, let's say 2 TBSP of powder and 1 TBSP of nibs. Go with your heart on this.

Fresh Fruit and Coconut Water Smoothie

Here is another watermelon recipe. I used fruits on my shelves that needed to be used ASAP! Here is what I came up with.

Ingredients:

1 small watermelon
2 kiwis
2 mangoes
2 cups coconut water 

Since the watermelon is a nice size, I first blended half the watermelon, kiwis, and 1 cup of coconut water and strained the mix into a big glass bowl.

Next, I blended the other half of the watermelon, 2 mangoes, and 1 cup of coconut water and strained the mixture into the glass bowl.

Stir the juice. Pour.

Enjoy!


Vegan Chick'n and Broccoli Alfredo

I am a trying to transition to a fullyraw vegan lifestyle, but sometimes, I want a hot meal. Tonight I wanted pasta, alfredo to be precise, and I wanted it to be spicy. I raided my kitchen came up with a simple and delicious recipe. Here is what I came up with. 



Cook the pasta according to the instructions. I added the broccoli to the boiling water. 
While that is mixture is cooking, I cooked the meatless chicken strips. After about 3 minutes, I added the cajun seasoning to the strips. I let that cook for another 5 minutes.
Drain the pasta and vegetables and return back to the pot. Turn the heat down to low. Add the alfredo sauce and black pepper and mix well. 
Add the strips to the pot and stir. I love my food spicy, so I added a bit more cajun seasoning. 
This meal is delicious, filling, and easy to make. Also, I have enough for dinner tomorrow! 
Of course, you may jazz this dish up however you like. Make it your own!

Green Smoothie

With the summer coming upon us, I am looking forward to many of my favorite fruits coming to farmer's markets and produce sections very soon. Oh my goodness, the combinations I will come up with....

Today, I made a simple green smoothie using my blender. A simple recipe with amazing flavor. It is smooth with the consistency of those "healthy" bottled smoothies, only better, much better. 

Ingredients:

2 kiwis
1.5 cups frozen mangoes
1.5 cups frozen peaches
1 cup coconut water 
2 handfuls of baby spinach
1 lemon, juiced 

Blend for 2 minutes.

Enjoy! 


Watermelon and Cherry Juice

Today I did some produce shopping. I was craving a juice, but did not really know what I wanted that juice to be. As I made it to the produce section, I zoomed in on small watermelons! I have missed them so. During the off season, I see bowls of watermelon chunks and slices, but they do not replace buying a big watermelon. I can make do with the small ones. I grabbed a couple of them along with other fruits and vegetables for the kitchen stash and made my way home. 

As I stood in my kitchen, I wondered what do I want to add to the watermelon. Light bulb! Cherries, coconut water, and lemon juice. Rather than juice these ingredients, I decided to go for the blender. Here is what I came up with.

Ingredients:
1 cup of frozen cherries
1 cup coconut water
juice of 1 lemon
1 small watermelon cut into chunks

Add everything to the blender. Run for a 1 minute or so.

Strain and pour.

Enjoy! 



Chocolate Covered Strawberry Smoothie

I have a bit of a sweet tooth and sometimes want to consume junk food, especially chocolate- donuts, cookies, ice cream, and cake. I sometimes make vegan versions of my favorite desserts. Other times, I whip up a smoothie or nice cream to satisfy those cravings. Today, those cravings were chocolate covered strawberries. Going off of what I had in the kitchen and making the recipe as I went, here is the smoothie I came up with.  

Ingredients:

1 cup fresh strawberries
1 cup frozen strawberries
1.5 cups milk (I used Almond Breeze original)
Cacoa powder
Cacao nibs 

Blend until everything is well mixed.

Pour and enjoy!



Tangerine Juice

I needed to use the last of the tangerines I got from campus, so I used my lemon juicer to juice the tangerines and mixed the juice with coconut water. The result, a delicious, refreshing juice, perfect for a warm sunny day in Memphis.

Ingredients:

Approximately 12 tangerines
2 cups of coconut water

Tropical Green Juice

This beautiful green juice is a smooth, fruity tropical magical mixture. However, I made this banging ass juice some months ago, posted on a couple of social media platforms, and did not add the ingredients like I usually do. So I am going to try my hardest to recall the recipe. I am sure I remember, but the amounts are vague, especially since I do not measure or keep track unless I know I am posting for others. Here we go.

Ingredients:
1 Papaya
1 Pineapple
5 Green apples
2 cups Coconut water
1 Bundle of Kale
1 Bag of Spinach leaves
2 Pears
2 Lime

Run everything through the juicer.

Enjoy!! 


Pumpkin Creamsicle Juice

Back in the fall, as a famous coffee chain advertised their popular pumpkin spice latte, I seriously considered using pumpkin in a juice. Normally I do not think of consuming pumpkin, but I am trying to be open minded about diversifying my produce. So on a trip to the grocery store, I picked up a pumpkin. Here is what I did with it.

Ingredients:

1 small pumpkin
2 bags carrots
5 green apples
6 fresh squeezed oranges
2 cups coconut water
few drops of vanilla extract

Run everything through the juicer except the vanilla; add that to the juice mixture and stir.

Enjoy!




Tastes Like Lime Shebert

Real quick, this juice tastes like lime sherbet with a punch of ginger! Let's get to it.

Ingredients:
5 green apples
2 pears
1 bundle of kale
2 handfuls of romaine
1 lemon with peel
1 lime with peel
1 cantaloupe
1 honeydew melon
1 cucumber
1 thumb of ginger
4 cups of coconut water 

Run everything through the juicer.

Enjoy!



Allergy Busting Cabbage Juice

Since moving to the south, my allergies have been off the chain. Oh. My. Goodness. I think nature has it out for me. I need a juice that is packed with antioxidants and vitamins. Here is what I came up with.
Ingredients:
1/2 head cabbage 2 cups cranberries 1 bag black grapes 1 lemon with peel 3 cups pomegranate juice 2 mangoes 2 thumbs ginger root 4 cups coconut water 8 gala apples (use any kind of apples you want)
Run everything through the juicer.
Enjoy! 



Purple Cabbage and Watermelon Juice

Since becoming a vegan, I have been trying to be creative with the combination of fruits and vegetables I blend and juice. Sometimes the inspiration begins with a specific color of juice I want. This time, I wanted a red or purple juice. Never before have I considered juicing purple cabbage. I must say, it is one of my favorite ingredients to use. Searching my kitchen for ingredients for a red or purple juice, I came up this delicious juice.
Ingredients:
1 purple cabbage 1 watermelon 4 cups coconut water
Run everything through the blender. 
Purple cabbage is bitter, so adjust recipe accordingly.

I came across another article, not sure where I saw it, asking readers to imagine themselves as something else. I thought this list of questions was cool, especially since I find it difficult to answer questions about myself outside of the easy ones, name, birthplace, occupation, favorite, color, etc. I admit, this short list took some time to answer because I have not thought about many of these questions, but I gave it a shot. So, here goes.

If I were a:

Month: September because fall is my favorite season- the leaves change colors, I feel a newness in the air, and I can breathe better during the fall and winter months with bugs and plants dying.

Vegan Chicken Teriyaki Wraps

I have been working on making cheap, easy, and time efficient vegan recipes using ingredients that are easy to find and tweak. Earlier this week, I made simple teriyaki wraps. Not only did this recipe take only minutes to make and put together, but these wraps were so good and filling. Here is what I came up with.

Ingredients:

Beyond meat chicken strips
Teriyaki sauce (I used Soy Vey kosher sauce with sesame seeds)
Tortilla wraps
Bag of salad (use whatever leafy greens you like)

Directions:

Cook the strips according to the instructions
Add the sauce and allow them to cook for a couple of minutes (I did not measure the sauce)
Warm up tortillas

Assemble the wraps. You can add any vegetable you like; also try different sauces- hot sauce, BBQ, chipotle, salad dressing, etc. 

Be creative, it's your palate!!
